Health 170 - Introduction to Dietetics Profession
This course focuses on the scope and nature of work in the nutrition field, including higher education pathways, career opportunities, professional roles, skills, responsibilities, ethics. Includes guest presentations by various nutrition paraprofessionals and networking opportunities with registered dietitians.
   

Health 171 - Nutrition for Health
This course covers the study of nutrients with emphasis on their physiological roles, food sources, and health implications.​ Dietary principles and tools for planning a healthy diet will be used, and nutrition issues of current interest and concern will be analyzed.

Health 172 - Foodways, Nutrition & Health
A study of the cultural and socioeconomic influences on the food habits of different ethnic groups in the United States and their diet-related health risks and implications. Cross-cultural counseling strategies, food service sanitation and safety, and optimal use of food dollars will also be covered.

Health 173 - Life Span Nutrition and Assessment
A study of the nutritional needs and special nutrition issues common at different periods of the life cycle from conception, infancy, childhood, adolescence, young middle and late adulthood, including pregnancy and lactation. Nutrition screening parameters to assess nutrition risk for each age group will also be covered.

Health 174 - Clinical and Community Nutrition
A two-part course that focuses on the principles of medical nutrition therapy and on nutrition applications in public health. The clinical nutrition component will cover effects of diseases and disorders on nutrition, and examines how diet therapy by itself or along with other treatment modalities promotes recovery and achievement of optimal nutritional status. The community nutrition component covers basic skills in delivering nutrition services in community health settings with emphasis on nutrition education.

​Health 175 - Nutrition Assistant Field Experience
This course provides hands-on experience at various public health and nutrition care settings such as Women, Infants and Children (WIC) Supplemental Nutrition Programs, Head Start programs, Senior Nutrition Programs, University of California Cooperative Extension, public health agencies, or other health care settings. Students learn and practice entry- level, job-specific skills and competencies in the delivery of nutrition care and services under the supervision of registered dietitians or other qualified nutrition professionals (preceptors).

HLTH 175L - Nutrition Assistant Clinic

As part of the field experience of the Nutrition Assistant Program, the Nutrition Clinic will provide the opportunity to conduct nutrition counseling services for the campus community, including intake, assessment, motivational interviewing, diet analysis, nutrition education, and documentation under the supervision of registered dietitian faculty.

HLTH 177 - Introduction to Child Nutrition

Overview of child nutrition issues, with an emphasis on practical skills and approaches to influence positive eating behaviors that promote optimal health and nutrition. Topics include basic nutrition principles, planning healthy meals and snacks, food safety, childhood obesity, physical activity, nutrition education, child nutrition programs and food assistance resources.
