African Heritage Menu

Welcome to my African Heritage Food Truck!

For my Management of Quantity Food Purchasing class our final project was to create our own food business and create a full three day menu.

I decided the concept for my menu would be on African Heritage and the African Diaspora. I compiled nutrient dense recipes that represent parts of Africa and the African Diaspora. My concept was that my restaurant would be a food truck.

This food truck would travel around to different historically black neighborhoods serving breakfast lunch and dineer.

 

My inspirations was to focus on the health of Africa and the African Diaspora through food. This can help to join these communities together and learn about each other and foster connection. Also to highlight fulfilling and nutrient dense meals. 

I was also inspired by a study switching traditional meals eaten by an African population to a group of African Americans in the south. The particular group in the south was eating a diet high in fat, burgers and fries. The traditional diet eaten by the African group, high in fiber and low in fats. The results saw a huge reduction of colon cancer risk in the African

Americans.

So maybe other diseases prevalent in the African Diaspora would not be so high with nutrient dense

meals that everyone knows and loves.
